Iberian pork contains a high concentration of monounsaturated fats, especially located in the ham, which contributes positively to lowering cholesterol and consequently avoiding the developement of cardiovascular diseases.
The free range grazing helps monounsaturated fats to infiltrate the muscle tissue. Proof of these are the gleaming white veins interspersed with the meat, which confers tastiness and healthiness to the final product.
The Mediterranean diet, renowned worldwide as a healthy diet, is mainly based on the use of olive oil for cooking. Olive oil is rich in oleic acid, vitamin E and antioxidant substances. However, you find these things not only in olive oil, but also in Iberian ham. It might be surprising, but it has been scientifically proven that due to the free-range feeding process, cured Iberian pork fat has a high concentration of oleic acid. In addition to this, Iberian Pigs, while in the dehesa, also eat grass, tubers and roots, which further increase the antioxidant qualities of cured Valturra Iberian ham.
